1 lb ground lamb or beef
1/4 cup breadcrumbs
1/4 cup finely chopped onion
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon ground cumin
Salt and pepper, to taste
1 cup Greek yogurt
1/2 cup finely chopped cucumber
1 tablespoon lemon juice
1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
1 clove garlic, minced

In a bowl, combine the ground lamb or beef, breadcrumbs, finely chopped onion, minced garlic, dried oregano, dried thyme, ground cumin, salt, and pepper.
Mix the ingredients together until well combined.
Shape the mixture into small, thin patties or logs, resembling the shape of traditional gyro meat.
Cook the gyro meat on a grill or in a skillet over medium-high heat for about 4-5 minutes per side, or until cooked through and nicely browned.
- Remove the gyro meat from the heat and let it rest for a few minutes before slicing into thin strips.
For the tzatziki sauce
In a bowl, combine the Greekyogurt, finely chopped cucumber, lemon juice, chopped fresh dill, minced garlic, salt, and pepper.
Stir the ingredients together until well combined.
To assemble the tacos
Warm the flour tortillas in a dry skillet or microwave them until soft and pliable.
Spread a spoonful of tzatziki sauce onto each tortilla.
Add a few slices of gyro meat on top of the sauce.
Top with sliced tomatoes, sliced red onions, chopped fresh parsley, and crumbled feta cheese.
Fold the tortillas in half to form the tacos.
