Delicious Blueberry Pancakes
Every mouthful has an explosion of honey!
Ingredients
- 1 1/2 cups regular flour
- 3 1/2 tsp. baking powder
- 1 teaspoon sea salt
- 2 tbsp of white sugar
- 1 and 1/4 cup milk
- 1 egg
- 3 tbsp melted butter (or veggie oil)
- 1 cup blueberries, fresh
Method
01.Whisk together the flour, baking powder, salt, and sugar in a large mixing basin.
02.Whisk together the milk, egg, and melted butter or vegetable oil in a separate basin.
03.Stir the wet ingredients into the dry ingredients until just mixed. The batter should have a small lumpiness to it.
04.Fold in the fresh blueberries gently into the batter.
05.Preheat a griddle or nonstick skillet over medium heat. Grease the surface lightly with butter or cooking spray.
06.For each pancake, pour 1/4 cup batter into the skillet. Cook until bubbles appear on the surface, then turn and cook until golden brown on the other side.
07.Transfer the cooked blueberry pancakes to a dish and cover with a clean kitchen towel to keep warm while you finish the rest of the batter.
08.Serve the pancakes with more fresh blueberries, maple syrup, and powdered sugar on top.
