Ingredients
- 9 noodles for lasagna
- 3 cups spinach leaves, fresh
- 2 cups mushrooms, sliced

- 2 cups tomato sauce
- 2 cups of ricotta
- 2 cups mozzarella cheese, shredded

- A quarter of a teaspoon of black pepper
- 1/2 teaspoon salt

- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for a few minutes until the onion is translucent.
- Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown. Stir in the fresh spinach and cook until wilted. Remove from heat.
- In a bowl, combine the ricotta cheese, dried basil, dried oregano, salt, and black pepper. Mix well.
- In a greased 9x13-inch baking dish, spread a thin layer of marinara sauce on the bottom.
- Place 3 lasagna noodles evenly over the sauce.
- Spread 1/3 of the ricotta cheese mixture over the noodles, followed by 1/3 of the mushroom and spinach mixture. Sprinkle with mozzarella and Parmesan cheese.
- Repeat the layers two more times, ending with a layer of marinara sauce and a generous amount of mozzarella and Parmesan cheese on top.
- Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is melted and golden.
- Allow the lasagna to cool for a few minutes before slicing and serving.
