01. Salad Waldorf Style

 A classic combination of tastes and textures!

Ingredients
  • 2 cups chopped apples (sweet and tart kinds preferred)
  • 1 cup finely sliced celery
  • 1 cup halved red grapes
  • 1 cup walnuts, chopped
  • 1 mayonnaise cup
  • 1 tablespoon Greek yogurt (or sour cream)
  • 2 teaspoons honey
  • 1 teaspoon of lemon juice
  • Season with salt and pepper to taste.
  • Optional fresh lettuce leaves for serving

Method

01.Combine the diced apples, sliced celery, half red grapes, and chopped walnuts in a large salad dish. 02.To make the dressing, mix together the mayonnaise, Greek yogurt (or sour cream), honey, and lemon juice in a separate dish. 03.Toss the fruit and nut combination lightly with the dressing to coat. 04.To taste, season with a touch of salt and pepper. 05.For a classy appearance, serve the Waldorf Salad over a bed of fresh lettuce leaves. 06.Serve as a side dish or as a light and refreshing supper right away.


02.Salad with Asian Sesame Noodles
Every mouthful is a flavor explosion!

  • Cook Time: 5 minutes (for cooking noodles)
  • Total Time: 25 minutes

Ingredients
  • 8 ounces soba noodles (or other noodles of your choice)
  • 1 cup carrots, shredded
  • 1 finely sliced cucumber
  • 1 finely sliced red bell pepper
  • 3 finely sliced green onions
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup roasted sesame seeds
  • 1/2 cup chopped roasted peanuts (optional) To make the dressing
  • 1 tablespoon soy sauce
  • three tbsp sesame oil
  • two tbsp rice vinegar
  • 2 teaspoons honey
  • 1 tablespoon grated fresh ginger
  • 2 minced garlic cloves
  • 1 teaspoon red pepper flakes (to taste)
  • Season with salt and pepper to taste.

Method

01.Soba noodles should be cooked according to package directions. To cool them down, drain and rinse with cold water.

02.Combine the cooked and cooled soba noodles, shredded carrots, thinly sliced cucumber, thinly sliced red bell pepper, green onions, cilantro, mint, toasted sesame seeds, and chopped peanuts (if using) in a large salad bowl. 03.To make the dressing, combine the soy sauce, sesame oil, rice vinegar, honey, grated ginger, chopped garlic, red pepper flakes, salt, and pepper in a separate bowl. 04.Dress the noodle and veggie combination with the dressing. 05.Toss everything together to evenly coat the salad with the dressing.

06.Season with more salt, pepper, or red pepper flakes to taste.

07.Serve right away as a delicious and refreshing entrée.
