Salad with Greek dressing

Ingredients
- 1 cucumber, diced 4 tomatoes, diced 1 red onion, finely sliced 1 cup pitted Kalamata
- olives 1 cup crumbled feta
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 1 tsp. dried oregano
- Season with salt and pepper to taste.
- Garnish with fresh oregano leaves (optional).
Method
- Combine the chopped cucumber, diced tomatoes, sliced red onion, and Kalamata olives in a large salad bowl.
- Crumble the feta cheese over the top of the salad.
- To make the dressing, mix together the extra-virgin olive oil, red wine vinegar, dried oregano, salt, and pepper in a small dish or jar.
- Drizzle the salad dressing over the items.
- Gently toss the salad to incorporate, making sure all of the items are coated with the dressing.
- If desired, garnish with fresh oregano leaves.
- Serve immediately as a simple side dish or snack.
