 Salad with Greek dressing

Ingredients

  • 1 cucumber, diced 4 tomatoes, diced 1 red onion, finely sliced 1 cup pitted Kalamata
  • olives 1 cup crumbled feta
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tsp. dried oregano
  • Season with salt and pepper to taste.
  • Garnish with fresh oregano leaves (optional).
Method

  • Combine the chopped cucumber, diced tomatoes, sliced red onion, and Kalamata olives in a large salad bowl.
  • Crumble the feta cheese over the top of the salad.
  • To make the dressing, mix together the extra-virgin olive oil, red wine vinegar, dried oregano, salt, and pepper in a small dish or jar.
  • Drizzle the salad dressing over the items.
  • Gently toss the salad to incorporate, making sure all of the items are coated with the dressing.
  • If desired, garnish with fresh oregano leaves.
  • Serve immediately as a simple side dish or snack.
