Minestrone Soup

Ingredients

  • 2 tbsp of olive oil
  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 sliced carrot
  • 1 sliced celery stalk
  • 1 sliced zucchini
  • 1 cup green beans, peeled and chopped into bite-size pieces
  • 1 can chopped tomatoes (14 oz) (with liquids)
  • 4 cups veggie broth
  • 1 can (14 oz) washed and drained kidney beans
  • 1 cup tiny pasta (ditalini or elbow macaroni)
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • Season with salt and pepper to taste.
  • Parmesan cheese, grated (optional, for serving)
  • Garnish with fresh basil leaves
Method

01.Warm the olive oil in a big saucepan over medium heat. Sauté the chopped onion until transparent.

02.Cook for another minute, or until the garlic is aromatic.

03.Mix in the carrots, celery, zucchini, and green beans. 
Cook for a few minutes, or until the veggies soften.

04.Combine the chopped tomatoes and vegetable broth in a mixing bowl. Bring the mixture to a boil, then turn it down low. Allow it to boil for about 15 minutes, covered.

05.Add the kidney beans and tiny pasta and mix well. Cook until the pasta is cooked, according to the package directions.

06.Season the Minestrone Soup to taste with dried oregano, dried basil, salt, and pepper.

07.Ladle the soup into bowls, top with fresh basil leaves, and serve immediately. If preferred, top with grated Parmesan cheese.
