Ingredients
  • 2 tbsp. melted butter
  • 1 chopped onion
  • 2 minced garlic cloves
  • 3 cups florets broccoli
  • 3 cups veggie broth
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream or whole milk
  • 2 tbsp. all-purpose flour
  • Season with salt and pepper to taste.
  • Optional: a sprinkle of nutmeg
  • Toppings: croutons or additional shredded cheddar
Method

01.Melt the butter in a big saucepan over medium heat. Sauté the chopped onion until transparent.

02.Cook for another minute, or until the garlic is aromatic.

03.Combine the broccoli florets and vegetable broth in a mixing bowl. Bring to a boil, then lower to a low heat. Cook, covered, for 10-15 minutes, or until the broccoli is soft.

04.In a separate mixing bowl, combine the flour and milk (or heavy cream) until smooth.

05.Pour the milk mixture into the saucepan slowly, stirring constantly. Cook and stir the soup until it thickens.

06.Reduce the heat to low and mix in the shredded cheddar cheese until smooth and melted.

07.Season with salt, pepper, and nutmeg, if preferred.

08.Ladle the Broccoli Cheddar Soup into bowls and sprinkle with croutons or more shredded cheddar to serve.

  1. Consider garnishing with chopped cooked ham or crispy bacon for extra texture and taste.
  2. For a richer soup with broccoli bits, use an immersion blender to partly mix the soup.
  3. As a thickening, add a gluten-free flour mix or cornstarch to make the soup gluten-free.
