📝 Method
  1. Rinse the sushi rice in cold water until it is clear. Drain thoroughly.
  2. Combine the sushi rice and water in a saucepan. Bring to a boil, then lower to a low heat and cover for about 20 minutes, or until the rice is tender and the water has been absorbed.
  3. Mix the rice vinegar, sugar, and salt in a small bowl until the sugar and salt dissolve.
  4. Pour the vinegar mixture over the cooked rice in a large mixing basin. Gently fold in the seasoning to coat the rice. Allow it to cool until it reaches room temperature.
  5. Place a bamboo sushi mat on a clean surface and top it with a sheet of nori.
  6. Wet your hands and sprinkle a handful of sushi rice evenly over the nori, leaving about 1 inch at the top free of rice.
  7. In the center of the rice, arrange a row of vegetable matchsticks.
  8. Roll the sushi firmly from the bottom, applying mild pressure to mold it into a cylinder with the bamboo mat. To seal the roll, moisten the top edge of the nori with water.
  9. Rep with the rest of the nori sheets and ingredients.
  10. Cut each roll into bite-sized pieces using a sharp knife.
  11. Soy sauce and pickled ginger should be served alongside the veggie sushi rolls.
