🍣 Vegetable Sushi Rolls 🥕🥒
Prep Time: 30 minutes
Cook Time: 20 minutes
Total Time: 50 minutes
Servings: 4
- 2 cups sushi rice
- 2 1/2 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 4 sheets of nori (seaweed)
- Assorted vegetables of your choice, such as cucumber, carrot, bell pepper, avocado, etc., cut into thin matchsticks
- Soy sauce, for dipping
- Pickled ginger, for serving
📝 Method
- Rinse the sushi rice in cold water until it is clear. Drain thoroughly.
- Combine the sushi rice and water in a saucepan. Bring to a boil, then lower to a low heat and cover for about 20 minutes, or until the rice is tender and the water has been absorbed.
- Mix the rice vinegar, sugar, and salt in a small bowl until the sugar and salt dissolve.
- Pour the vinegar mixture over the cooked rice in a large mixing basin. Gently fold in the seasoning to coat the rice. Allow it to cool until it reaches room temperature.
- Place a bamboo sushi mat on a clean surface and top it with a sheet of nori.
- Wet your hands and sprinkle a handful of sushi rice evenly over the nori, leaving about 1 inch at the top free of rice.
- In the center of the rice, arrange a row of vegetable matchsticks.
- Roll the sushi firmly from the bottom, applying mild pressure to mold it into a cylinder with the bamboo mat. To seal the roll, moisten the top edge of the nori with water.
- Rep with the rest of the nori sheets and ingredients.
- Cut each roll into bite-sized pieces using a sharp knife.
- Soy sauce and pickled ginger should be served alongside the veggie sushi rolls.
