📝Ingredients include

01.One cup of florets cauliflower

02.One cup of chopped carrots

03.One cup of fresh green peas

04.One cup of chopped bell peppers

05.One cup of chopped tofu or paneer (if making a vegetarian version)

06.One teaspoon of vegetable oil

07.1 big coarsely chopped onion

08.three minced garlic cloves

09.One inch piece grated ginger

10.One cup of pureed tomatoes

11.One cup of canned coconut milk

12.Two tablespoons of cumin powder

13.Two tablespoons of coriander powder

14.One teaspoon of turmeric powder

15.one paprika teaspoon

16.One teaspoon of garam masala

17.a single teaspoon chili powder (modify according to personal taste)

18.Season with salt to taste

📖technique

01.Using a large skillet or saucepan, heat the vegetable oil                over medium heat.

02.Boil until the onion is transparent, about 5 minutes.

03.To the hot skillet, add the minced garlic and grated ginger.          Cook for another minute, or until aromatic.

04.Heat until the tofu or paneer (if used) is slightly browned.

05.Mix the cumin, coriander, turmeric, paprika, garam                       masala, chili powder, and salt in a mixing bowl. Combine             thoroughly.

06.On the skillet, combine the cauliflower florets, carrots,                  green peas, and diced bell peppers. Stir in the spices to coat        the vegetables.

07.Stir in the tomato puree and coconut milk. Stir everything          together thoroughly.

08.Covered the skillet or pot and cook for 15-20 minutes, or                until the vegetables are soft.

09.Try out the salt and spices to suit your tastes.

10.When serving, garnish with chopped fresh cilantro.
