Delicious Stir-Fry Tofu with Colorful Vegetables

A High-Protein Recipe for a Fast and Healthy Meal
Ingredients
- One box of firm tofu, drained and cubed
- A variety of veggies, such as bell peppers, broccoli, snap peas, carrots, and mushrooms
- Three teaspoons of soy sauce
- Two tablespoons of sesame seed oil
- two minced garlic cloves
- One teaspoon of ginger, grated
- One tablespoon of cornstarch (optional for thicker sauce)
- Add with salt and pepper to taste.
- Oil for cooking used in stir-frying
- Possible garnishes include sesame seeds and chopped green onions.
Guidelines
01.Using a large skillet or wok, heat a tablespoon of cooking oil over medium-high heat.
02.Stir-frying the tofu cubes until they are golden brown and crispy. Set the tofu aside after removing it from the pan.
03.Add an additional teaspoon of cooking oil to the same skillet and stir-fry the minced garlic and grated ginger until fragrant.
04.Mix the veggies in the skillet for a few minutes, or until they are crisp-tender.
05.Mix together the soy sauce, sesame oil, and cornstarch (if using) in a small bowl until smooth. Pour the sauce into the pan with the veggies.
06.Return the tofu to the skillet and mix everything together to cover the tofu and veggies evenly with the sauce.
07.Stir-fry for another 2-3 minutes, or until the sauce thickens slightly and everything is well cooked.
08.Season to taste with salt and pepper.
09.Remove from the heat and top with sesame seeds and green onions.
10.Serve over steaming rice or noodles for a filling, protein-packed supper.
