📝 Ingredients

  • 1 cup sushi rice 🍚
  • 2 nori seaweed sheets 🌿
  • 4 large scallops, cooked and sliced 🍣
  • 1/4 cup spicy mayo (mayonnaise mixed with sriracha or chili sauce) 🌶️🥣
  • 1/2 cucumber, julienned 🥒
  • 1/4 cup tobiko (flying fish roe) for garnish 🐟
  • Soy sauce, for dipping 🍱
  • Wasabi and pickled ginger, for serving 🍱
📝 Method

01.Cook the sushi rice as directed on the package or in a rice cooker. Allow it to come to room temperature.

02.Place a nori seaweed sheet on a clean kitchen towel or a bamboo sushi mat.

03.To prevent sticking, wet your fingers and distribute half of the sushi rice evenly over the nori, leaving about half an inch of nori at the top edge.

04.Over the rice, spread a thin layer of spicy mayo.

05.Along the center of the nori sheet, arrange the cut scallops and julienned cucumber.

06.Begin rolling the sushi away from you with the bamboo mat or cloth, tucking in the contents as you go. To make a firm roll, use mild pressure.

07.After rolling, wet a sharp knife and slice the roll into bite-sized pieces.

08.Garnish the Spicy Scallop Roll with tobiko.

09.Repeat the process with the remaining ingredients.

10.Arrange the Spicy Scallop Roll sushi pieces on a serving platter.
