Ingredients

  • 2 cups regular flour
  • granulated sugar 2 cups
  • 3/4 cup chocolate powder, unsweetened
  • 2 tbsp. baking powder
  • 1.5 teaspoon baking soda
  • 1 teaspoon sea salt
  • two huge eggs
  • 1 quart milk
  • 1/2 cup olive oil
  • 2 tablespoons peppermint oil
  • 1 cup of hot water
  • Optional green food coloring (for aesthetic appeal)

To make the mint frosting

  • 1 1/2 cups softened unsalted butter
  • 4 cups confectioners' sugar
  • a quarter cup milk
  • 1 teaspoon essence of peppermint
  • Optional green food coloring (for aesthetic appeal)

Method

01.Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Prepare two 9-inch round cake pans by greasing and flouring them.

02.Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing basin.

03.To the dry ingredients, add the eggs, milk, vegetable oil, peppermint essence, and green food coloring (if using). Mix on medium speed until everything is fully incorporated.

04.Reduce the speed to low and slowly drizzle in the hot water, mixing until the batter is smooth and thin.

05.Pour the batter into the prepared cake pans in an equal layer.

06.Bake for 30 to 35 minutes, or until a toothpick inserted into the middle comes out clean.

07.Remove the cakes from the oven and cool for 10 minutes in the pans. Then place them on a wire rack to cool entirely.

08.While the cakes are cooling, make the mint frosting. In a mixing dish, cream the softened butter. Gradually stir in the powdered sugar, milk, peppermint essence, and green food coloring (if using). Beat until the frosting is creamy and fluffy.

09.Once the cakes have completely cooled, cover the top of one cake layer with the mint frosting. Place the second cake layer on top and coat the entire cake with the remaining frosting.

10.For a classy touch, garnish with chocolate shavings or fresh mint leaves.
