Ingredients

  • Two cups of sliced mushrooms, medium thickness
  • Two poblano chiles, sweated and skinned before slicing into strips
  • half white onion, cut and divided into rings
  • One teaspoon of unsalted butter
  • Half a teaspoon to 1 teaspoon kosher salt (or to taste)

01.🍄Fry the mushrooms: Melt the butter in a pan over medium heat. Cook until the sliced mushrooms are soft and gently browned. Set aside after removing from the skillet.

02.🌶️Cook the poblano chiles by placing them directly on a gas burner or under the broiler until the skins blister and become black. Place the chiles in a plastic bag and steam for a few minutes. Remove the skins, seeds, and chop the chilies into strips.

03.🧅 Saute the onion: In the same skillet, fry the sliced onion until transparent and slightly caramelized. Set aside after removing from the skillet.

04.🍳Combine the following three ingredients: To the skillet, add the cooked mushrooms, poblano chile strips, and caramelized onions. Combine them and season with salt to taste. Cook for another minute to enable the flavors to meld.

05.🌮Assemble the tacos as follows: Warm up your taco shells or tortillas of choice. Fill the mushroom, poblano, and onion mixture into each shell.
