- Two cups of ricotta
- Two cups of mozzarella cheese, shredded
- One cup of Parmesan cheese, grated

- Half a cup of walnuts, chopped
- one diced onion
- three minced garlic cloves
- Two tablespoons of olive oil
- One teaspoon of thyme dried
- one tablespoon of salt
- A quarter of a teaspoon ground black pepper
🔸 Method
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for a few minutes until the onion is translucent.
- Add the butternut squash cubes to the skillet and season with dried thyme, salt, and black pepper. Cook for about 10 minutes until the squash is tender. Remove from heat and set aside.
- In a bowl, mix together the ricotta cheese, chopped sage leaves, and half of the grated Parmesan cheese.
- In a greased 9x13-inch baking dish, spread a thin layer of the butternut squash mixture on the bottom.
- Place 3 lasagna noodles evenly over the squash.
- Spread 1/3 of the ricotta cheese mixture over the noodles, followed by 1/3 of the remaining butternut squash mixture. Sprinkle with shredded mozzarella cheese and chopped walnuts.
- Repeat the layers two more times, ending with a layer of lasagna noodles, remaining ricotta cheese mixture, and a generous amount of mozzarella and Parmesan cheese on top.
- Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is melted and golden.
